Q3. Can I change or cancel my order after it has been placed?
A. Once an order has been confirmed, changes or cancellations can only be made before the order is shipped. Please note that changes or cancellations cannot be made after the order has been shipped.

Q5.How long does it take for delivery?
A. Normally, we ship within 1-3 business days after your order is confirmed. Delivery time depends on the delivery area.

Q6. Who is the delivery company?
A. We use Sagawa Express, Yamato Transport, Japan Post, etc. We will inform you of the delivery company at the time of shipping.

Q7. Is it possible to ship overseas?
A. Currently, we do not ship overseas. We only ship within Japan.

A. Generally, sake does not have an expiration date, but please consume it as soon as possible after opening. For storage instructions, please see the instructions on each product page.

Q13. Are there any products that need to be kept refrigerated?
A. Unpasteurized sake and other products that require refrigeration must be stored in the refrigerator. This is stated on the product page, so please check.

Q14. How do you drink sake?
A. Sake can be enjoyed chilled, at room temperature, or warmed. Recommended drinking methods are listed on each product page.

The Basics of Sake

Q1. What types of sake are there?
A. Sake is divided into several types depending on the rice polishing ratio and production method. The most common types are as follows:

Junmaishu: Sake made only from rice, rice malt, and water. You can really taste the flavor of the rice.
Honjozo sake: Sake made from rice, rice malt, water, and a small amount of brewer's alcohol.
Ginjo-shu: Sake made using rice with a polishing ratio of 60% or less and fermented at low temperatures. It has a gorgeous aroma and a light taste.
Daiginjo: Sake made from rice that is polished to 50% or less, with a more delicate and refined flavor.
Namazake: Sake that is shipped without pasteurization (heat treatment). It has a fresh flavor.

Q2. What is the difference between Junmai sake and Honjozo sake?
A. Junmai sake is made only from rice and water, which gives it a rich rice flavor. On the other hand, honjozo sake has a small amount of brewing alcohol added, which makes it light and refreshing to drink.

How sake is made

Q3. What is Kimoto-zukuri?
A. **Kimoto-zukuri (Kimoto-zukuri)** is a traditional brewing method that uses natural lactic acid bacteria to cultivate the yeast starter. It takes time and effort, but it produces a complex flavor and a strong, full-bodied taste.

Q4. What is Yamahai brewing?
A. Yamahai brewing is a method that eliminates the step of "yamaoroshi" from the kimoto brewing process. By allowing lactic acid bacteria to grow naturally, it is possible to brew more efficiently while still maintaining a flavor similar to kimoto brewing.

Q5. What is pasteurization?
A. Pasteurization is a process in which sake is heated before or after bottling. This suppresses the activity of microorganisms and stabilizes the quality. Namazake is sake that is not pasteurized, and you can enjoy a fresher taste.

How to store and drink sake

Q6. How should I store sake?
A. The basic rule of thumb is to store sake away from direct sunlight and high temperatures.

Before opening: Store in a cool, dark place (namazake must be refrigerated).
After opening: Store in the refrigerator and consume within one week.

Q7. Is there an ideal temperature for drinking sake?
A. Different types of sake have different appropriate temperatures.

Chilled sake (5-10℃): Daiginjo, Ginjo, Namazake Room temperature (15-20℃): Junmai, Honjozo Warmed sake (40-55℃): Junmai, Yamahai, Kimoto

Q8. Can I drink sake that has been frozen?
A. Freezing sake can damage its flavor. We recommend thawing it and checking to see if the flavor has changed before drinking.

How to Drink Sake

Q9. How does sake go with food?
A. Sake goes extremely well with food.

Q10. How long can I enjoy sake after it has been opened?
A. Sake is at its best within one week after opening, but if stored in the refrigerator it can be enjoyed for 2-3 weeks. It is especially recommended to drink unpasteurized sake as soon as possible.
