Sake Brewery - Tsuchida Sake Brewery

They only use three ingredients - rice, water, and koji - and bacteria. They are particular about brewing sake using the lactic acid bacteria and other microorganisms that live in the brewery, encouraging their activity.

The master brewer, Hoshino, was born and raised in Tokyo, but wanted to make sake in Gunma Prefecture, where his grandfather grew up, so he called Tsuchida Sake Brewery directly and became a brewer, an unusual career path.

This is a sake brewery that is boldly trying new things, such as making sake using eating rice.
